From crispy tempura to Hokey Pokey Honeycomb – chef Monica Galetti is revving up Singapore Airlines inflight dining.
Customers flying with Singapore Airlines from the UK will now be able to sample some flavour highlights of celebrity chef Monica Galetti, as the carrier launches a range of seasonal menus.
Passengers in Singapore Airlines Suites, First Class, or in Business Class can experience a “refined four-course exclusive” in-flight menu thanks to the new partnership with the acclaimed chef and TV personality.
The airline – which launched an additional service from Gatwick this year – will offer the four-course service to Suites and First Class customers, and a three-course menu for Business Class customers.
Born in Samoa, Monica trained as a chef in New Zealand, moving to the UK in 1999, where she was classically trained under chef Michel Roux Jr at two Michelin-starred Le Gavroche.
The chef said she has taken inspiration from her South Pacific roots and classical French training to create a fusion of flavours with locally sourced produce for Singapore Airlines. There are four menus in each season to enjoy, including one of her signatures, the Hokey Pokey dessert – a chocolate and honeycomb treat inspired from her childhood in New Zealand.
“Bringing fine dining to customers at 35,000ft is my most exciting culinary journey yet,” Galetti said. “From fresh lobster to fine caviar and warming soups to locally sourced lamb, customers can expect a world-class in-flight dining experience. I’m hoping that when customers try the food, not only are they seeing beautiful food but it’s also delicious – that’s what people want; great quality delicious food.”
Mohamed Rafi Mar, Singapore Airlines general manager UK and Ireland, added: “We are excited to have Monica’s new seasonal menus on board our flights from this October. Whether flying out of Heathrow, Manchester, or from our latest departure point in Gatwick, our Suites, First Class, and Business Class customers will be treated to gourmet in-flight dining from one of London’s top chefs.”
Singapore Airlines currently works with five world-renowned chefs under its International Culinary Panel in the design of Suites, First Class, and Business Class menus. Two of the chefs are Michelin star recipients, collectively holding 10 Michelin stars.
Galetti’s seasonal menus will be available from October until November 2025 on flights departing from the UK and a European or Asian menu will still also be available.
Customers can also opt for Singapore Airlines’ Book the Cook service at least 24 hours prior to departure, allowing them to make favoured selections in advance.
